Grandma Mildred's Banana Nut Loaf
Wet Ingredients
½ cup shortening (butter)
3 crushed over-ripe bananas
1 cup granulated sugar
2 eggs (medium)
¼ cup frozen orange juice concentrate
Directions
Cream shortening.
Use butter wrapper to grease the loaf pan. Dust pan with flour.
Crush bananas.
Combine crushed bananas with creamed shortening, 2 eggs, and 1 cup sugar.
Add ¼ cup frozen orange juice concentrate.
Dry Ingredients
2 cups all purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
¼ cup warm water
1 teaspoon vanilla
½ cup chopped walnuts
Directions
Sift 2 cups flour, ½ teaspoon salt, and 1 teaspoon baking powder together into a bowl.
Dissolve ½ teaspoon baking soda in ¼ cup warm water. Add 1 teaspoon vanilla. (Set aside. Do not add to dry ingredients!)
Grind ½ cup chopped walnuts. Set aside.
Directions
Add a small portion of dry ingredients to banana mixture. Mix.
Add a small portion of soda water to banana mixture. Mix.
Continue to add dry ingredients alternately with soda water.
Add nuts and gently mix.
Bake in loaf pan (greased or lined with wax paper) at 350°F for 45-50 minutes. Test with a toothpick.
